    bran

    ml
    boiling water
  • 250
    ml
    sugar
  • 110
    g
    butter or margarine
  • 250
    ml
    cake flour
  • 375
    ml
    wholewheat flour
  • 2
    ml
    salt
  • 12
    ml
    bicarbonate of soda
  • 60
    ml
    buttermilk
  • 2
    extra-large eggs, whisked
 

Method

 
Preheat oven to 180 °C and grease a muffin tin with 12 hollows.
Mix together the bran, boiling water, sugar and butter.
Leave to cool.
Combine the cake flour, wholewheat flour and salt.
Add the bran mixture.
Dissolve the bicarbonate of soda in the buttermilk, add the eggs and stir into the bran mixture.
Spoon the mixture into the tin and bake for 15 to 20 minutes or until done.
