Trio of chilled soups

    ripe strawberries, hulled
  • 3
    medium ripe green-fleshed melons, peeled and seeded
  • 3
    large ripe mangoes, peeled and stoned
  • 2
    freshly squeezed orange juice
  • salt and milled black pepper to taste


Purée each fruit individually, then mix each with 500 ml (2 cups) freshly squeezed orange juice. Season to taste with salt and pepper. Cover and chill. Just before serving, pour into pretty coffee cups. Add a few slices of fresh strawberry to the strawberry soup, a swirl of yoghurt and mint to the green melon soup, and a sprig of mint to the mango soup. TOTAL KILOJOULE COUNT: 6 495 kJ (1 550 Cal). A portion: 720 kJ (170 Cal).
