    egg, lightly whisked

    finely chopped basil

    finely chopped marinated sun-dried tomatoes

    crumbled feta cheese

    grated mozzarella cheese

    chopped pine nuts or sesame seeds
 

Method

 
Grease a 20 cm ring cake tin.
Sift together the yeast, sugar, flour and salt in a large mixing bowl.
Add the milk, water and egg and mix to form a soft dough.
Cover the dough and leave to rise in a warm place for 30 minutes or until double in volume.
Preheat the oven to 180 °C.
Combine all the filling ingredients and mix well.
Punch down the dough and divide into 12 pieces.
Flatten each piece to make a 10 cm circle and spoon 20 ml of the filling in the middle of each circle.
Gather together the edges of each circle to enclose the filling and arrange the parcels in the greased pan.
Brush with olive oil and bake for 50 minutes.
Rest the bread in the tin for 10 minutes before turning out.
Serve with a mixture of balsamic vinegar and olive oil.
