Ingredients (13)

2000.00 ml stock — vegetable
6.00 lemongrass — chunks
6.00 lime leaves — dried
3.00 fresh chillies — finely sliced
3.00 cm fresh ginger — sliced
60.00 ml fish sauce
10.00 ml brown sugar — or palm sugar
250.00 ml mushrooms — mixed
250.00 ml courgettes — baby, ribbons
250.00 ml carrots — peeled, ribboned
1.00 red pepper — sliced into strips
2.00 lime — juice only
1.00 coriander

Method:

Pour stock, lemongrass, lime leaves, chillies and ginger into a large pot and bring to boil
Reduce heat; simmer for 20 minutes.
Add fish sauce, sugar and veggies.
Simmer for 5 minutes to just cook through.
Remove from heat, add lime juice and coriander, and serve.
