    ml
    vegetable stock
  • 6
    lemongrass stock, cut into chunks
  • 6
    dried lime leaves
  • 3
    chillies, finely sliced
  • 3
    cm
    fresh ginger root, peeled and sliced
  • 60
    ml
    fish sauce
  • 10
    ml
    brown or palm sugar
  • 250
    ml
    mixed mushrooms
  • 250
    ml
    baby marrow, finely sliced into strips
  • 250
    ml
    carrot, peeled into ribbons
  • 1
    red pepper, sliced into strips
  • 2
    juice of limes, optional
  • 1
    large handful coriander
 

Method

 

Pour stock, lemongrass, lime leaves, chillies and ginger into a large pot and bring to boil
Reduce heat; simmer for 20 minutes.
Add fish sauce, sugar and veggies.
Simmer for 5 minutes to just cook through.
Remove from heat, add lime juice and coriander, and serve.
