  • leg of mutton
  • salt, pepper and coriander
 

Method

 
Cut a leg of mutton, shoulder mutton or mutton chine into long, pencil-thin strips. Sprinkle with salt, pepper and coriander to taste. Place in an earthenware dish and stand for 8 hours. Hang in a cool, dry place until completely dry.
