  • 375

    soft brown sugar
  • 80
    ml
    oil
  • 500
    ml
    digestive bran
  • 200
    ml
    raisins
  • 100
    ml
    sultanas
  • 100
    ml
    dried apricot, chopped
  • 100
    ml
    dried mango, chopped
  • 12.5
    ml
    bicarbonate of soda
  • 625
    ml
    cake flour
  • 5
    ml
    vanilla essence
 

Method

Beat the eggs and sugar together. Add the oil and mix well.

Add the remaining ingredients plus 5ml salt and mix together thoroughly.

Grease the muffin pans well or place paper casings into a muffin pan. Half fill with the prepared mixture and bake at 180°C for 10 minutes.
