Ingredients (11)

2 eggs — extra-large
375 ml brown sugar — soft
80 ml oil
500 ml digestive bran
200 ml raisins
100 ml sultanas
100 ml apricots — dried, chopped
100 ml mango — dried, chopped
12.5 ml Bicarbonate of soda
625 ml flour — cake
5 ml vanilla — essence

Method:

Beat the eggs and sugar together. Add the oil and mix well.

Add the remaining ingredients plus 5ml salt and mix together thoroughly.

Grease the muffin pans well or place paper casings into a muffin pan. Half fill with the prepared mixture and bake at 180°C for 10 minutes.
