Tongan Otai cocktail

Ingredients

  • 1
    pineapple
  • 1
    can
    coconut milk
  • 1
    tsp
    brown sugar
  • 2
    Tbs
    fresh coconut
 

Method

 
Peel the pineapple and blitz together with the coconut milk and the sugar.
Toast the coconut for a minute or 2. Be careful not to burn it.
Pour into 4 cocktail glasses.
Sprinkle each one with a little toasted coconut and serve immediately.
