Tomatoes in verjuice

  • 30
    ml
    butter
  • 400
    g
    cherry tomatoes
  • 50
    ml
    sugar
  • salt and freshly ground black pepper to taste
  • 350
    ml
    verjuice
 

Method

 
Heat the butter in a pan and sauté the tomatoes for two minutes.
Add the sugar, shaking the pan until the tomatoes start to caramelise.
Season to taste with salt and pepper.
Add the verjuice and simmer until the liquid becomes slightly syrupy. Serve immediately with Quails in vine leaves.
