Tomato stew

    olive oil

    medium onion, diced
  • 2
    cloves garlic, sliced thinly
  • 1
    bay leaf
  • 800
    ripe sweet red and yellow peppers, cored, seeded and sliced
  • 450
    tomatoes, chopped
  • salt
  • freshly ground black pepper


1. Heat the olive oil in a heavy-based pan, add the onion and cook over a gentle heat until the onion is golden, about 5 to 7 minutes. 2. Add the garlic and the bay leaf, continue cooking for 2 minutes, then throw in the peppers and cook for a further 10 minutes. Add the tomatoes, salt and pepper and cook, stirring occasionally, for 10 minutes. Serve hot or cold.
