Tomato sauce

    onions, chopped
  • 2
    cloves garlic, crushed
  • 30
    ml
    butter
  • 1
    kg
    ripe tomatoes, skinned and coarsely chopped
  • 30
    ml
    sugar
  • 5
    ml
    dried basil
  • salt and freshly ground black pepper
  • 70
    g
    can tomato paste
 

Method

 
Fry the onion and garlic in the heated butter until tender and glossy. Add the tomatoes and remaining ingredients. Reduce the heat, cover and simmer slowly for 30 minutes. Thicken with a little cornflour if necessary. Use as a sauce or serve with spaghetti or crumbly pap.
