Tomato sauce

    ml
    olive oil
  • 1
    (or more) cloves garlic, crushed
  • 1
    medium onion, chopped
  • 1
    x 410 g can Italian plum tomatoes
  • 125
    ml
    red wine (optional)
  • 50
    ml
    fresh basil, shredded (or 5 ml dried)
  • 1
    ml
    dried origanum
  • 3
    ml
    sugar
  • 30
    ml
    tomato paste
  • salt and pepper to taste
 

Method

 
Heat the olive oil in a saucepan. Add the garlic and onion.
Sauté for two minutes, then add the tomatoes and wine (if using). Add the basil, origanum, sugar and tomato paste.
Bring to the boil, reduce heat and simmer for 15 to 20 minutes.
Season to taste and leave chunky or puré until smooth in a food processor.
Serve with pasta, sausages, chicken, fish and vegetables.
