Tomato, pea & cheese salad

Ingredients

    frozen baby peas, cooked and cooled
  • 500

    dwarf tomatoes or sliced baby tomatoes
  • 150
    g
    Provolone, feta, or cheddar cheese, finely diced
  • 6
    whole spring onions, coarsely sliced
  • 90
    ml
    olive oil
  • juice and rind of 1 lemon
  • 5 - 10
    ml
    crushed garlic
  • salt and milled black pepper
  • 250
    g
    rocket or watercress, shredded
 

Method

Mix all ingredients together lightly and serve immediately.
