Tomato & olive sauce

Ingredients

  • 250
    g
    small black olives, pitted
  • 100
    ml
    olive oil
  • 50
    ml
    lemon juice
  • 2
    tsp
    coriander seeds, lightly crushed
  • handful sage leaves
  • 2
    ripe tomatoes, skinned, seeded and chopped
 

Method

Heat the olives gently in the oil, and then squeeze in the lemon juice.
Remove from the heat and add the coriander and sage.
Finally stir in the tomato, and spoon over the cooked fish fillets.
Serve immediately.
