Tomato garlic butter

    sun-dried tomatoes
  • 30
    ml
    olive oil
  • 250
    g
    unsalted butter
  • 15
    ml
    freshly chopped parsley
  • salt and milled black pepper to taste
  • 4
    cloves garlic, crushed
  • 15
    ml
    lemon juice
 

Method

 
Soften tomatoes in oil. Place butter, herbs and seasoning in a food processor and blend. Remove tomatoes from oil, add to butter mixture in blender with garlic and lemon juice and blend briefly. Heap into a dish and chill. Makes 250 g
