CRUST
130.00 g butter
250.00 g flour — cake
1.00 eggs — whisked
FILLING
32.00 cherry tomatoes
32.00 feta cheese — cubed
1.00 avocado — cubed
salt and freshly ground black pepper

Method:

Rub the butter into the flour. Add the egg and a little water if necessary to form a soft dough. Allow to rest for 15 minutes before lining four tartlet tins, about 10 cm in diameter. Preheat the oven to 210 ºC and bake for 8-10 minutes until cooked and a straw colour. Stir-fry the tomatoes for about half a minute in a hot pan. Remove from the pan. Remove the pastry cases from the tartlet tins and place on a plate. Fill each pastry case with 8 cherry tomatoes, 8 cubes of feta and avocado. Season with salt and ground black pepper.
Serves 4.
