Tomato, courgette and onion gratin

    onions, thinly sliced

    cloves garlic, chopped
  • 750

    tomatoes, skinned, seeded and sliced
  • 750

    courgettes, sliced
  • 7

    chopped fresh marjoram
  • 60
    ml
    chopped fresh parsley
  • salt and freshly ground black pepper
  • 60
    ml
    grated Parmesan cheese
  • 30
    ml
    fresh white breadcrumbs
  • 60
    g
    margarine
 

Method

 
1. Grease baking dish with margarine. 2. Heat the oil in a frying pan and sauté the onion. Add the garlic, cook for 1 to 2 minutes, then add the tomato. Cook for a further 5 minutes. 3. Layer the vegetables in the baking dish with the herbs and seasoning. 4. Mix the cheese and breadcrumbs and sprinkle over the vegetables. Dot margarine over the top and bake in a preheated oven at 190 ºC for 20 minutes until topping becomes crisp.
