Ingredients (11)

60.00 ml oil
2.00 onions — thinly sliced
4.00 garlic — cloves, chopped
750.00 g tomatoes — peeled, deseeded, sliced
750.00 g courgettes — sliced
7.00 ml fresh marjoram — chopped
60.00 ml fresh parsley — chopped
sea salt and freshly ground black pepper
60.00 ml parmesan cheese — grated
30.00 ml breadcrumbs — white
60.00 g margarine

Method:

1. Grease baking dish with margarine.
2. Heat the oil in a frying pan and sauté the onion. Add the garlic, cook for 1 to 2 minutes, then add the tomato. Cook for a further 5 minutes.
3. Layer the vegetables in the baking dish with the herbs and seasoning.
4. Mix the cheese and breadcrumbs and sprinkle over the vegetables. Dot margarine over the top and bake in a preheated oven at 190 ºC for 20 minutes until topping becomes crisp.
