Tomato basil purée

  • 800
    g
    potatoes
  • 50
    g
    butter
  • salt, white pepper and nutmeg
  • 225
    ml
    creamy, warmed milk
  • ADDITIONAL INGREDIENTS
  • 3
    tomatoes
  • 45
    ml
    tomato purée
  • salt
  • freshly ground black pepper
  • pinch of sugar
  • 30
    ml
    finely chopped basil
 

Method

 
Boil potatoes, drain well. Put through metal sieve or press into rinsed pan. Beat in cubed butter and seasonings and gradually start adding the warm milk. Beat until light and fluffy, adding only enough milk to get the desired consistency. Scald tomatoes in boiling water and peel. Quarter tomatoes, remove seeds and chop roughly in a food processor. Don't make tomato too fine or purée will become very runny. Add the rest of the ingredients and mix well. Stir into potato purée and adjust seasoning. Garnish with a sprig of basil. Delicious served with grilled pork fillet or chops.
