Tomato and samp dish

    uncooked samp, soaked overnight
  • 1
    onion, finely chopped
  • oil
  • 3
    tomatoes, skinned and finely chopped
  • salt and freshly ground black pepper to taste...

    Cheddar cheese, grated


Pour off the soaking water and cover the samp with fresh cold water. Bring to the boil and simmer till soft. Season with salt towards the end of the cooking time. Drain and mash slightly with a potato masher. Add a knob of butter and a little milk, if preferred. Sauté the onion in a little oil till soft. Add the tomato and simmer till a sauce is formed. Season with salt and pepper and add the samp. Mix lightly, add half the cheese and mix. Sprinkle with the remaining cheese. Serves 3-4.
