Ingredients (6)

500.00 ml samp — uncooked, soaked overnight
1.00 onion — finely chopped
oil
3.00 tomatoes — peeled an finely chopped
salt and freshly ground back pepper — to taste
150.00 ml cheddar cheese — grated

Method:

Pour off the soaking water and cover the samp with fresh cold water. Bring to the boil and simmer till soft. Season with salt towards the end of the cooking time. Drain and mash slightly with a potato masher. Add a knob of butter and a little milk, if preferred.
Sauté the onion in a little oil till soft. Add the tomato and simmer till a sauce is formed. Season with salt and pepper and add the samp. Mix lightly, add half the cheese and mix. Sprinkle with the remaining cheese.
Serves 3-4.
