Tomato and rocket tagliatelle with lemon and parmesan

    packet tagliatelle
  • Salt
  • 5
    olive oil
  • 2
    cloves garlic, chopped
  • 250
    rosa tomatoes
  • 2
    handfuls of rocket
  • 1
    lemon, zest and juice
  • Extra virgin olive oil
  • Parmesan shavings
  • Freshly ground salt and pepper

Cook the pasta in salted boiling water until al dente.
While pasta is cooking in a separate frying pan, halve the tomatoes and sauté in hot oil with the garlic for 2 minutes.
Strain the pasta,don't rinse with cold water, and put back into the pot.
Add the rocket, tomatoes, lemon juice and zest, a good glug of olive oil, parmesan and season well.
Toss until well combined.
