Tomato and onion sambal

    ripe tomatoes, diced
  • 2
    small onions, diced
  • 20
    ml
    sugar
  • 60
    ml
    white vinegar (you may need more)
  • 125
    ml
    water
  • handful coriander leaves, chopped
  • salt and black pepper
 

Method

 
To make the sambal, mix all ingredients together and season generously with salt and black pepper. Chill until just before serving.
