Tomato and onion potatoes

    large potatoes
  • 1
    tomato, sliced
  • 1
    small onion, sliced into rings and halved
  • garlic oil
  • salt
  • pepper


Wash potatoes and slice without cutting right through them. Place a tomato and onion slice in each cut and coat the potatoes with garlic oil. Season with salt and pepper and bake at 200 ºC (400 ºF) until the potatoes are soft and done. Baste with garlic oil occasionally.
