Tomato and mnce mixture

  • oil
  • 1
    onion, chopped
  • 2
    cloves garlic, crushed
  • 1
    small green pepper, diced (optional )
  • 3
    rashers bacon, chopped
  • 750
    g
    mince
  • 2
    carrots, diced (optional)
  • 400
    g
    whole tomatoes in tomato purée, chopped
  • 30
    ml
    tomato paste
  • 5
    ml
    dried basil
  • 5
    ml
    origanum
  • 1
    ml
    nutmeg
  • 5
    ml
    white sugar
  • salt and freshly ground black pepper to taste
 

Method

+/- 30 min
 
Pour a little oil into a heated pan and fry the onion, garlic and green pepper until glossy. Add the bacon and fry until done. Add small quantities of the mince at a time, stir-frying until done. Add the carrots, tomatoes and remaining seasonings. Bring to the boil, reduce the heat and simmer slowly for about 20 minutes until a thick, flavoursome sauce is formed. Use as described in the remaining recipes.
