Tomato and melon salad

Ingredients

    bag tomatoes, cut into wedges
  • 1
    sweet melon, cubed
  • 3
    avocados, cubed
  • 2
    yellow peppers, roasted, peeled and sliced
  • 30
    ml
    freshly chopped coriander
  • MINT DRESSING
  • 250
    ml
    plain yoghurt
  • 15
    ml
    lemon juice
  • 5
    ml
    grated lemon rind
  • 60
    ml
    olive oil
  • 30
    ml
    freshly chopped mint
  • salt and freshly ground black pepper
 

Method

 
Toss salad ingredients together and serve with mint dressing. DRESSING: Whisk the yoghurt, lemon juice and rind together in a small bowl. Gradually whisk in the oil and continue to whisk until smooth and slightly thick. Season to taste and add the mint just before serving.
