Tomato and mealie loaf

    self-raising flour

    packet cream of tomato soup powder

    mealie meal
  • 250
    ml
    Cheddar cheese, grated
  • 125

    lean mince (beef, pork or chicken)
  • 500
    ml
    buttermilk
  • 30
    ml
    milk
 

Method

 
Preheat the oven to 180 ºC (350 ºF) . Spray a 29 x 11 x 7 cm loaf pan with non-stick spray. Sift together the self-raising flour and baking powder in a mixing bowl. Add the cream of tomato soup, mealie meal and 200 ml of the grated cheese. Fry the mince until done and stir into the self-raising flour mixture. Stir in the buttermilk and milk. Pour into the prepared loaf pan and sprinkle with the remaining cheese. Bake for about 1 hour or until a testing skewer comes out clean. Switch off the oven and leave the loaf to cool in the oven. Serve with butter and extra cheese if desired. Makes 18 slices.
