Tomato and feta cheese salad with tarragon dressing

  • SALAD DRESSING
  • 90
    ml
    tarragon vinegar
  • 30
    ml
    chopped fresh origanum
  • 15
    ml
    wholegrain mustard
  • 1
    small onion, very finely chopped
  • 1
    large clove garlic, crushed
  • 5
    ml
    grated fresh ginger
  • 5
    ml
    sugar
  • 250
    ml
    extra virgin olive oil
  • salt and black pepper
  • SALAD
  • 4
    large tomatoes, diced
  • 85
    ml
    calamata or black olives, seeded and chopped
  • 100
    ml
    crumbled feta cheese
  • handful mixed lettuce leaves
  • 1
    Italian bread, heated and sliced
 

Method

 
Blend the first 7 salad dressing ingredients and gradually beat in the olive oil. Season to taste with salt and black pepper. Mix the salad ingredients and moisten with a little of the salad dressing. Stack the leaves on top of the bread and top with the salad. Garnish with a few whole olives and fresh origanum and serve with extra salad dressing.
