Ingredients (14)

SALAD DRESSING
90.00 ml vinegar — tarragon
30.00 ml fresh oregano — chopped
15.00 ml wholegrain mustard
1.00 onion — small, very finely chopped
1.00 garlic — cloves, crushed
5.00 ml fresh ginger — grated
5.00 ml sugar
250.00 ml olive oil — extra virgin
salt and freshly ground black pepper
SALAD
4.00 tomatoes — diced
85.00 ml olives — calamata, pitted, chopped
100.00 ml feta cheese — crumbled
lettuce — mixed
1.00 bread — Italian

Method:

Blend the first 7 salad dressing ingredients and gradually beat in the olive oil. Season to taste with salt and black pepper.
Mix the salad ingredients and moisten with a little of the salad dressing. Stack the leaves on top of the bread and top with the salad.
Garnish with a few whole olives and fresh origanum and serve with extra salad dressing.
