Tomato and coriander marinade

  • 1
    ripe tomato, peeled and finely chopped
  • 60
    ml
    olive or sunflower oil
  • 5
    ml
    mustard powder
  • 5
    ml
    chilli paste
  • salt and milled black pepper to taste
  • 15
    ml
    finely chopped fresh coriander
 

Method

 
Blend all ingredients. Place fish fillets in a dish and smooth over paste on both sides of fish. Marinate for 10 to 15 minutes before grilling (see grilled linefish recipe).
