Tomato and chicken curry

    cooked chicken breasts - shredded
  • 15
    ml
    olive oil
  • 1
    red onion - peeled and chopped in rings
  • 1
    can
    chopped peeled tomatoes
  • 2
    Tbs
    mild and spicy curry powder
  • 2
    Tbs
    sweet chilli sauce
  • 1
    pinch
    ground ginger
  • 1
    pinch
    ground cinnamon
  • 2
    Tbs
    brown sugar
  • 2
    Tbs
    mayonnaise
  • Salt and black pepper to taste
  • Fresh marjoram or parsley for garnish
  • 375
    ml
    uncooked basmati rice
 

Method

First, heat the olive oil in a large saucepan and sauté the onion until translucent. Add the tin of tomatoes, bring to a boil and cook for 3 – 5 minutes.

Now is a good time to cook the rice.

Add the rest of the spices, sugar and mayonnaise to the saucepan - mix and let it simmer on low heat for another 5 minutes.

Plate up when the rice is ready, add shredded chicken on rice, and smother in rich tomato curry sauce.

Season with salt and pepper, and garnish with fresh herbs.
