Ingredients (14)

4.00 bread — thick white slices, crusts removed
25.00 ml butter
65.00 ml fresh chillies — 573
2.00 garlic — cloves, crushed
15.00 ml fresh chives — chopped
15.00 ml fresh parsley — finely chopped
15.00 g parmesan cheese — optional
700.00 g tomatoes — ripe, cut into wedges
1.00 red onion — large, thinly sliced
1.00 cucumber — diced
45.00 ml fresh basil — chopped
50.00 ml fresh chillies — 573
15.00 ml vinegar — red wine
sea salt and freshly ground black pepper

Method:

Cube the bread. Heat the butter, add 65 ml (1/4 c) olive oil and fry the bread cubes until lightly browned.
Add the garlic, chives and parsley and stir-fry until the bread cubes are golden brown. Remove from the pan and roll in the Parmesan cheese if using. Set side.
Mix the tomato with the onion and cucumber. Mix the remaining ingredients and pour over the tomato mixture. Add the bread cubes just before serving.
