Tomato and bread salad

    thick slices white bread, crusts removed

    butter
  • 65
    ml
    olive oil
  • 2
    cloves garlic, crushed
  • 15

    chopped chives
  • 15

    parsley, finely chopped

    Parmesan cheese (optional)

    ripe tomatoes, cut into wedges
  • 1
    large red onion, thinly sliced
  • 1
    cucumber, diced
  • 45

    fresh basil, chopped
  • 50
    ml
    olive oil
  • 15
    ml
    red wine vinegar
  • salt and freshly ground black pepper
 

Method

 
Cube the bread. Heat the butter, add 65 ml (1/4 c) olive oil and fry the bread cubes until lightly browned. Add the garlic, chives and parsley and stir-fry until the bread cubes are golden brown. Remove from the pan and roll in the Parmesan cheese if using. Set side. Mix the tomato with the onion and cucumber. Mix the remaining ingredients and pour over the tomato mixture. Add the bread cubes just before serving.
