Tomato and basil ravioli

Ingredients

    olive oil
  • 125

    fresh black mushrooms, sliced
  • 150

    fresh button mushrooms, sliced
  • 425

    chopped tomatoes
  • 3
    cloves garlic, crushed

    tomato paste
  • 30
    ml
    fresh basil, chopped
  • 500

    fresh ravioli
  • 30
    ml
    freshly grated Parmesan

Heat the olive oil in a large frying pan and gently fry the mushrooms for 1 minute. Add the tomatoes, garlic, tomato paste and basil and bring to the boil. Reduce heat and simmer for 10 minutes. Meanwhile, cook the pasta in boiling salted water for 4 minutes, or according to the packet instructions, then drain. Spoon the sauce over the ravioli and serve with freshly grated Parmesan cheese scattered over the top. Serves 4.
