Tomato and basil muffins

    sugar

    mustard powder

    extra-;large eggs

    milk
  • 125
    ml
    butter, melted
  • 20

    tomato paste
  • 1
    ripe tomato, peeled and finely chopped
  • 25

    freshly chopped basil
  • 15
    ml
    chives, finely chopped
 

Method

 
Preheat the oven to 180 °C (350 °F). Spray a muffin tin with 12 hollows with non-stick spray. Sift together the cake flour, baking powder, salt, sugar and mustard powder in a large mixing bowl. Whisk together the eggs, milk and butter. Add the tomato paste and tomatoes and mix well. Add the basil and chives. Add to the dry ingredients and fold in lightly until just blended. Fill the prepared muffin tins three quarters of the way with the mixture. Bake for 10 to 15 minutes or until the muffins are done and a testing skewer comes out clean when inserted into the centre. Serve lukewarm with butter.
