Tomato Sauce

Ingredients

    ml
    olive oil
  • 2
    onions, finely chopped
  • 750
    g
    tinned whole Italian tomatoes
  • 125
    ml
    red wine
  • 40
    ml
    tomato paste
  • 40 ml fresh basil or 5 ml dried basil
  • 5
    ml
    sugar
  • salt and freshly ground pepper
 

Method

Heat the olive oil in a large saucepan. Add the chopped onion and sautè until it's slightly transparent. Add the rest of the ingredients ans season with salt and freshly ground pepper. Let the mixture cook for about 1½ hours, with the lid slightly removed, not forgetting to stir every now and then. Pour the sauce through a sieve and then using a food processor. Season again if needed.
