Tom yam gai (Chicken and lemon grass soup)

    ml
    water
  • 2
    chicken breast fillets
  • 3
    cloves garlic, crushed
  • 1
    large dried chilli, crushed
  • 6
    spring onions
  • 4
    lime leaves
  • 2
    stalks lemongrass
  • 30
    ml
    fish sauce
  • 15
    ml
    sugar
  • 15
    ml
    lemon juice
 

Method

10 minutes
 
Heat the water and chicken breasts in a saucepan. Remove the chicken after 6 minutes, and slice. Add the garlic, chilli, spring onions (cut into 4 cm pieces), lime leaves and lemon grass (cut into 5 cm pieces) to the water and bring to the boil add the chicken, fish sauce and sugar and boil for 1 minute. Remove from the heat, stir in the lemon juice, garnish with fresh coriander and serve immediately.
