Ingredients (17)

30.00 ml oil
3.00 leeks — sliced
3.00 garlic — cloves, crushed
25.00 ml fresh ginger — freshly grated
100.00 g mangetout
1.00 carrots — large, sliced
1.00 red pepper — sliced
60.00 ml cashew nuts
10.00 ml cornflour — slurry
100.00 ml water
15.00 ml fish sauce
25.00 ml soy sauce
15.00 ml lemon juice
10.00 ml sugar
300.00 g tofu — drained, cubed
salt and freshly ground black pepper — to taste
rice — cooked, to serve

Method:

Heat oil in a wok or large saucepan.
Sauté; the leeks, garlic and ginger for one minute, then add the mangetout, carrot and red pepper. Stir-fry for a few minutes, until veggies are cooked, but still firm.
Add nuts, cornflour and water, fish sauce, soy sauce, lemon juice and sugar. Stir until slightly thickened.
Serve immediately with rice.
