Tofu stir-fry

    cashew nuts

    cornflour mixed with

    fish sauce

    soy sauce

    ml
    lemon juice
  • 10
    ml
    sugar
  • 300
    g
    tofu, drained and cubed
  • salt and freshly ground black pepper, to taste
  • cooked rice, to serve
 

Method

10 minutes
 
Heat oil in a wok or large saucepan. Sauté; the leeks, garlic and ginger for one minute, then add the mangetout, carrot and red pepper. Stir-fry for a few minutes, until veggies are cooked, but still firm. Add nuts, cornflour and water, fish sauce, soy sauce, lemon juice and sugar. Stir until slightly thickened. Serve immediately with rice.
