    spring onions, sliced

    baby leeks, chopped

    piece ginger, sliced

    garlic cloves, sliced

    soya sauce
  • 1
    Tbs
    sesame seeds, to garnish

    fresh coriander leaves, to garnish
  • 1
    dash
    sesame oil
 

Method

Place the cucumber, tofu, stock, mushrooms, spring onions, leeks, ginger and garlic in a saucepan and simmer for 10 minutes. Add the soya sauce. Spoon into bowls and garnish with sesame seeds and coriander leaves. Add a little sesame oil.
