Ingredients (12)

1.00 cucumber — sliced
200.00 g tofu — sliced
500.00 ml stock — chicken
100.00 g mushrooms — halved
4.00 spring onions — sliced
2.00 leeks — baby, chopped
5.00 cm fresh ginger — sliced
4.00 garlic — cloves, sliced
180.00 ml soy sauce
1.00 Tbs sesame seeds — to garnish
20.00 g fresh coriander — to garnish
1.00 dash sesame oil

Method:

Place the cucumber, tofu, stock, mushrooms, spring onions, leeks,
ginger and garlic in a saucepan and simmer for 10 minutes. Add
the soya sauce. Spoon into bowls and garnish with sesame seeds
and coriander leaves. Add a little sesame oil.
