Toasted ciabatta with oven roasted tomatoes and feta

  • 500
    g
    mixed tomatoes (cherry, rosa and yellow)
  • 1
    each red and white onions, finely chopped
  • olive oil
  • 4
    garlic cloves, finely chopped
  • mixed herbs (sage, rosemary, thyme and sweet basil) to taste, finely chopped
  • 5
    ml
    sugar
  • salt and pepper
  • 3
    rounds of feta cheese
  • 1
    large ciabatta, cut into slices thick enough to serve the tomato mixture on

Preheat the oven 200ºC.

Halve all the tomatoes. Mix with the onions, olive oil, garlic, mixed herbs and sugar and season to taste with salt and pepper. Roast in the oven for about 15-20 minutes. Remove from the oven and crumble the feta over the top.

Brush the ciabatta slices with olive oil on both sides and fry in a hot pan. Spoon some of the tomato mixture onto each slice of toast and serve.
