Toast with mushroom and cheese sauce

    butter
  • 200

    fresh oyster or fresh button mushrooms
  • 35
    ml
    cake flour
  • 250
    ml
    milk
  • 190
    ml
    Cheddar cheese, grated
  • 2
    ml
    mustard powder
  • salt and pepper
  • 4
    slices brown bread
  • 30
    ml
    capers
  • little cayenne pepper
 

Method

 
Switch on the oven grill. Melt 15 ml of the butter and stir-fry the mushrooms until brown. Remove from the pan and set aside. Melt the remaining butter, add the cake flour, stir until smooth and heat for about one minute. Add small quantities of milk at a time while stirring continuously. Heat until the sauce comes to the boil and thickens. Add the cheese and mustard and stir until the cheese has melted. Season with salt and pepper to taste. Toast the bread on both sides and spoon the mushrooms on top. Sprinkle with the capers and divide the sauce between the slices of toast. Sprinkle with a little cayenne pepper and grill for 4-5 minutes or until warmed through. Serve immediately. Serves 2-3.
