Place flour in a bowl, make a well in the centre and add the eggs.
Mix in half the milk using a wooden spoon, working the mixture until it is smooth, and add the remaining milk.
Beat or whisk the mixture until it is fully combined and the surface is covered with tiny bubbles.
Preheat oven to 230 degrees celcius. Fry sausages in pan until lightly coloured, and remove excess fat, keeping it in reserve.
Divide reserved fat into four small ramekins and pour into batter.
Add sausage chunks and place in oven. Bake for five to ten minutes at 230 degrees celcius then reduce to 200 degrees celcius and bake for twenty to thirty minutes, or until batter around sausages has risen and is deep golden brown.
Serve immediately or pudding will deflate.
