  • 500
    g
    chicken necks or gizzards
  • 2
    bunches spring onions
  • 3
    leeks
  • 1
    onion
  • 3
    bay leaves
  • 6
    dill sprigs
  • 5
    ml
    salt
  • 2
    Litres
    water
 

Method

 
Place all ingredients in a soup pot and bring to boil. Turn down heat, cover with the lid and simmer for about 1 hour. Remove lid and continue simmering until stock is reduced (concentrated) to 1,5 litres. Cool, skim off fat and set aside until needed. Use to make shrimp and cucumber soup.
