Ingredients

    extra-large eggs
  • 100
    ml
    castor sugar
  • 250
    g
    cream cheese or creamed cottage cheese
  • 125
    ml
    Greek yoghurt
  • 5
    ml
    vanilla essence
  • 200
    ml
    strong black coffee
  • 20
    ml
    sherry
  • 125
    g
    sponge finger biscuits, broken into pieces
  • cocoa powder for sifting on top
 

Method

 
Separate the eggs; then whisk the egg yolks and castor sugar until thick and light.
Add the cream cheese (or cottage cheese), yoghurt and vanilla essence.
Whisk the egg whites until stiff and fold into the cheese mixture.
Mix the coffee with the sherry and dip the finger biscuits into the mixture.
Arrange layers of the cottage cheese mixture and finger biscuits in small coffee cups, ending with a scoop of the cheese mixture.
Chill until set, preferably overnight.
Dust with cocoa powder just before serving.
