    strong black Nescafé coffee
  • 65
    ml
    brandy
  • 175
    g
    sponge cake
  • 250
    g
    mascarpone cheese
  • 125
    g
    plain yoghurt
  • 125
    g
    ricotta cheese
  • 30
    ml
    vanilla essence
  • 125
    g
    castor sugar
  • 3
    egg whites
  • 15
    ml
    grated chocolate
 

Method

 
Mix coffee and brandy together. Dip half the sponge cake in the mixture, just to moisten. Use the dipped sponge cake to line a mould.
Mix mascarpone, yoghurt, ricotta, vanilla essence and sugar together.
Whisk egg whites until stiff. Fold into the cheese mixture. Layer half of this mixture on the dipped sponge.
Dip the remainder of the sponge cake in the coffee and brandy and place in a layer on top of the cheese mixture. Finish with another layer of cheese mixture.
Refrigerate until set.
