Ingredients (10)

125.00 ml nescafé strong black coffee
65.00 ml brandy
175.00 g cake — sponge, prepared
250.00 g mascarpone cheese
125.00 g yoghurt — plain
125.00 g ricotta cheese
30.00 ml vanilla — essence
125.00 g castor sugar
3.00 eggs — white
15.00 ml chocolate — grated

Method:

Mix coffee and brandy together. Dip half the sponge cake in the mixture, just to moisten. Use the dipped sponge cake to line a mould.

Mix mascarpone, yoghurt, ricotta, vanilla essence and sugar together.

Whisk egg whites until stiff. Fold into the cheese mixture. Layer half of this mixture on the dipped sponge.

Dip the remainder of the sponge cake in the coffee and brandy and place in a layer on top of the cheese mixture. Finish with another layer of cheese mixture.

Refrigerate until set.
