Tipsy pudding

    bicarbonate of soda
  • 150

    dates, stoned and chopped
  • 25
    ml
    butter
  • 140

    soft brown sugar
  • 1
    large egg, lightly beaten
  • 200

    self-raising flour
  • 125
    g
    dried apricots
  • SAUCE
  • 15
    ml
    butter
  • 225
    g
    soft brown sugar
  • 125
    ml
    brandy
  • 5
    ml
    vanilla essence
 

Method

Dissolve the bicarbonate of soda in 200 ml boiling water, add the dates and leave to cool.
Beat the butter, sugar and egg.
Add flour and date mixture to the sugar mixture, small amounts at a time.
Fold in apricots and pour into greased ramekins.
Bake at 180 °C for 25 to 35 minutes.
Sauce:
Heat butter, sugar and 150 ml water.
Boil for five minutes.
Stir in brandy and vanilla.
When the pudding comes out of the oven, prick the top with a fork and pour over the sauce.
