Ingredients (9)

500.00 g ox tongue — pickled, cooked, sliced
300.00 g beef — smoked, strips
200.00 g ham — cubed
20.00 ml fresh chillies — 573
50.00 ml wine — dry white
100.00 ml stock — meat
3.00 ml french mustard
freshly ground black pepper — to taste
1.00 lettuce — butter

Method:

Mix oil, white wine, meat stock, mustard and pepper.
Pour over the meat and marinade overnight in the refrigerator.
Arrange meat and lettuce on a chilled glass platter.
Spoon a little marinade over to moisten just before serving.
