Ingredients (8)

1.00 shortcrust pastry — shell
FILLING
100.00 g blue cheese — mashed
85.00 ml fromage frais — or smooth cottage cheese
85.00 ml mascarpone cheese
freshly ground black pepper
TOPPING
6.00 red onion — sliced
fresh chillies — 573
fresh thyme

Method:

Place baked shortcrust pastry case on a serving dish and set aside.
FILLING: Mash cheeses and seasoning together well. Spoon carefully into pastry case and spread out evenly. Chill.
TOPPING: Brush onion slices with oil and grill until softened but still firm and not burnt (singed edges are fine). Cool.
Arrange on top of cheese mixture in pastry case. Sprinkle with fresh thyme and serve at room temperature.
