    cold butter

    onions, sliced

    Cheddar cheese, grated

    ml
    uncoloured cheese, grated
  • 100
    ml
    blue cheese, crumbled
  • 3
    eggs, whisked
  • 250
    ml
    cream
  • salt and freshly ground black pepper
  • 5
    ml
    mustard powder
  • pinch grated nutmeg
 

Method

 
Preheat the oven to 180 °C (350 °F) and spray a 27 cm loose-bottomed pie dish with non-stick spray. Place all the ingredients for the crust in a food processor and process until a soft dough is formed around the blade. Press the dough on the base and along the sides of the pie dish and chill. Heat the oil in a large pan and sauté; the onions until glossy and tender. Cool. Mix the remaining ingredients and stir in the onions. Carefully pour the mixture into the prepared crust and bake for about 40 minutes or until set and golden brown. Makes a large tart.
