Thai-style seafood soup

    chicken stock
  • 4
    lemon grass stalks, sliced
  • 1
    ml
    crushed black peppercorns
  • 4
    chillies, slit to release flavour
  • 75
    ml
    fish sauce
  • 60
    ml
    lime juice
  • 250
    ml
    white fish, cut into bite-sized chunks
  • 250
    ml
    shelled prawns
  • 250
    ml
    calamari rings or small tubes
  • 250
    ml
    shelled mussels
  • 125
    ml
    fresh coriander leaves
  • extra fish sauce
 

Method

 
Place stock (use 2 cubes), lemon grass, peppercorns and chillies in a large saucepan. Bring to boil. Cook for 3 minutes. Add fish sauce and lime juice, and cook for a further 3 minutes. Add fish and seafood, and simmer until cooked, 5 minutes. Stir in fresh coriander and serve with extra fish sauce. To make the soup go further, serve with fragrant boiled rice.
