Ingredients (9)

500.00 g beef — strips
30.00 ml curry paste — red
250.00 ml cream
100.00 ml desiccated coconut
oil — for frying
1.00 onion — diced
2.00 garlic — cloves, crushed
salt
1.00 fresh coriander — chopped

Method:

Mix beef and curry paste in a small bowl and toss to coat. Set aside. Gently heat cream and add coconut. Simmer for about 5 minutes, remove from stove and set aside.
Heat oil in a pan and gently sauté onion and garlic. Add beef and stir-fry for about 1 minute.
Add coconut and cream, stir to mix well and cook for about 5 minutes. Season lightly with salt.
Stir in coriander, reserving a few whole leaves for garnish. Serve with rice or noodles.
