Thai-style mussels

Ingredients

  • 2
    kg
    fresh mussels in their shells
  • 3
    fat cloves garlic
  • 1
    x 5 cm knob of ginger, peeled and finely sliced
  • 1
    lemon, juice of, or
  • 2
    limes
  • 1
    Litres
    fish or chicken stock
  • 125
    ml
    fresh coriander
 

Method

6 minutes
 
Wash mussels well.
In a large pot, place the lemongrass stalks, garlic, ginger, juice of lemon or limes and the fish, vegetable or chicken stock.
Bring to the boil and add mussels and fresh coriander.
Cover and cook for about six minutes, until the mussel shells are open.
Serve immediately (discard any unopened mussel shells).
