Thai-style marinated chicken with fried noodles

Ingredients (12)

8.00 chicken breast fillets
MARINADE
90.00 g fresh coriander
2.00 red chilli — deseeded, chopped
2.00 lime — or lemon, juice only
100.00 ml fresh chillies — 573
0.00 freshly ground black pepper
0.00 noodles
500.00 g noodles — ramen
3.00 Litres water — boiled
15.00 ml salt
15.00 ml sunflower oil
30.00 ml peanut oil

Method:

Place chicken breasts, pounded to 3 mm thick, in a single layer in a glass dish.
MARINADE: Blend coriander and chillies coarsely in a food processor or blender, stir in lime or lemon juice, olive oil and pepper.
Pour over chicken breasts and marinate in the refrigerator, covered with a sheet of absorbent paper or waxed paper, for at least 2 hours but preferably overnight.
NOODLES: Place noodles in boiling water to which salt and sunflower oil have been added. Simmer for about 3 minutes, stirring often to prevent sticking, then turn out into a colander, run under cold water and drain.
Heat peanut oil in a pan, add noodles and stir-fry until golden. Do not overcook. Set aside.
Pour a little marinade over chicken fillets and grill under a heated grill for 2 to 4 minutes a side, depending on size.
Serve with fried noodles and steamed broccoli.
