Thai style fish cakes

    g
    cake flour
  • 2
    ml
    baking powder
  • 1
    egg, beaten
  • 15
    ml
    fish sauce
  • 15
    ml
    lime or lemon juice
  • 10
    ml
    chilli sauce
  • 150
    g
    crabmeat or tuna
  • 15
    ml
    chopped fresh coriander
  • salt and milled pepper
  • 30
    ml
    sunflower oil for frying
 

Method

 
Place all ingredients, except oil, in a bowl. Mix well. Heat oil in a frying pan until hot but not smoking. Drop heaped tablespoonfuls of mixture into oil. Fry for 1 minute on each side, or until golden. Drain on absorbent paper and keep warm in a hot oven while frying remaining cakes. Serve with pesto rice.
