Ingredients (13)

2.00 kg fish — white flesh
25.00 fresh basil
SAUCE
60.00 ml fish sauce
45.00 ml fresh lime juice — or fresh lemon juice
15.00 ml brown sugar — or palm sugar
1.00 garlic — cloves, crushed
1.00 fresh ginger — peeled, cut into matchsticks
1.00 fresh coriander — chopped
2.00 red chilli — deseeded and finely sliced
0.50 cucumber — julienned
2.00 carrots — julienned
1.00 pepper — red or yellow, strips
0.00 salt and freshly ground black pepper — to taste

Method:

Preheat the oven to 200 &degC.
Make a few incisions on both sides of the fish and stuff with the basil leaves.
Loosely wrap the fish in a double layer of aluminium foil and seal the sides by folding the foil over.
Leave enough room for air to circulate during baking.
Place the fish on a baking sheet and bake for 30 to 50 minutes, depending on the size of the fish.
SAUCE
Place all the sauce ingredients in a saucepan and bring to the boil.
Remove from the heat immediately and season with salt and pepper.
Place the fish on a serving platter and pour the hot sauce over while the fish is still warm.
Serve with steamed jasmin or basmati rice.
